Peaches and blueberries make an insanely delicious cobbler. They’re easy to mix and even better a la mode.
Cobblers are one of my favorite summer desserts. The combination of a buttery cake-like topping over fresh fruit is insanely delicious—better than pie, in my opinion.

This peach blueberry cobbler recipe is so easy to follow. The result is a delicious, fruit-filled dessert that is perfect for summertime. The best part about this recipe is that it can be easily adapted to whatever fruit you have on hand.
My Favorite Kitchen Tools To Make This Recipe
From trusty pots and pans to handy gadgets, I’ve curated a list of products I use and love.
My husband has great memories of cast iron cobblers on campouts. These cobblers usually consisted of dumping a can of pie filling into a Dutch oven, covering it with yellow cake mix, and throwing on a slab of butter.
While this method is easier, it doesn’t produce the same results as a cobbler made from scratch. Making a cobbler from scratch is simple and well worth the effort.

The key to a good cobbler is fresh, ripe fruit. I like to mix peaches and blueberries because they are both in season and taste superb together. You could also use all peaches or swap out the blueberries for raspberries or blackberries.

How to make peach blueberry cobbler
Prepare Peaches & Blueberries
Preheat the oven to 375 degrees. Get out a 9×13 glass baking dish spray with cooking oil and set aside. Peel and slice peaches.

In a mixing bowl, combine sliced peaches, blueberries, sugar, and flour until well combined.
Pour the peaches and blueberries into the prepared baking dish and bake for 10 minutes in the preheated oven.

Cobbler Topping
While the peaches and blueberries are cooking, prepare the topping.
In a medium mixing bowl, add baking mix (flour), brown sugar, baking powder, cinnamon, and chilled butter. Mix together using a fork or pastry blender until crumbly. Pour in the milk and vanilla extract and stir until combined.

Once the peaches and blueberries have baked for 10 minutes, remove them from the oven and top with a spoonful of the cobbler topping.
Place back in the oven and bake for 45 minutes.

Remove from the oven and let it sit for 5-10 minutes before serving.
We love to serve this a la mode with ice cream and a sprinkle of cinnamon or a drizzle of caramel. But it’s just as good on its own or even for breakfast with a dollop of yogurt.

OMG! Im not good at all at baking but this desert recipe is so easy that I even sucked in my first attempt to prepare it hehehe
Oh yay, this makes me so happy!!!!
it was very very good. When I looked at the crust, I thought for sure it was over cooked but it wasn’t. The only thing I might have done differently was added some walnuts for a little crunch. The blueberries turned everything purple, so you can’t even see the peaches. Trying to figure out how your peaches didn’t turn purple lol but once again,, Very very good. The recipe said to cook it on 375 for 45 minutes. I cooked it on 350 for 35 minutes. And the only other thing I did different was I added about five times more cinnamon then it called for lol. And I added a dash of lemon extract along with the vanilla extract.
